Soy Granola Recipe: Gluten Free?

Hi, I’m looking for a Granola or cereal Recipe that is mostly made from soy and is Gluten-Free. I’d prefer NO added sugars of any form (honey,cane etc.) but if the recipe calls for it, I can just omit it. I know there are soy cereals on the market, but all of them contain sugar, so I want to make my own. Something similar to puffed soy, or soy nuggets is the aim. Thanks for your help.

dont know about gluten soz

* 4 cups quick-cooking or regular rolled oats
* 1 cup oat bran
* 4 scoops (about 1 cup) natural soy protein powder (GeniSoy is good)
* 1/2 teaspoon salt
* 1 cup sunflower seeds
* 1 cup chopped nuts
* 3/4 cup canola oil
* 1/2 cup honey or maple syrup
* 1 Tablespoons vanilla extract
* 1/3 cup brown sugar – packed
* 1 cup pumpkin seeds

Preheat the oven to 325 degrees. Spray a 13×18″ baking tray (a jelly roll pan) with nonstick spray.

Combine the oats, oat bran, soy protein powder, salt, sunflower seeds, and nuts in a large bowl.

Combine the oil, honey, and vanilla; pour this mixture into the bowl. Mix thoroughly (use your hands if necessary).

Transfer the mixture to the prepared tray, and spread it out.

Bake for 35-45 minutes, or until golden, stirring once or twice during the baking.

Crumble in the sugar as soon as the granola comes out of the oven, and let it melt in. Cool it on the tray, and stir in pumpkin seeds as it cools.

When this comes out of the oven, you’ll be saying, “This isn’t very crunchy.” Let it cool completely. Something happens during the cooling that adds the cruch. Then you’ll be saying nothing because you’ll be so busy crunching. Try it with soy milk as a bowl of cereal for the complete soy experience.

There are gluten-free oats available. You won’t find it at any grocery store… need to go to a specialty health food store where they can certify the oats have not been contaminated in the same plant w/ wheat, barley, or rye products. At least that way the granola will be close to what gronola is supposed to be! LOL
