Is It Possible To Go From Eating Gluten Every Day To Suddenly Being Allergic?

This supposedly happened to my roommate. Apparently she gets panic attacks and doesn’t feel good after she’s eating gluten now. She already has chronic back pain, depression, has been suicidal, and was vegan. Is she just trying to add to the list for more attention? She is VERY dependent on her parents (that go along with everything and give her attention) still even though she’s in college. I don’t want to be mean but her dad has a gluten allergy and I feel like it would be an easy thing for her to make up. She says she can’t even have a salad if 1 crouton touched it (even if she picks the crouton off).

Either is possible I think.
She could be looking for attention. Although it’s tough to live a strict gluten free diet. For example, no wheat, no rye, no barley, no oatmeal, no pre-made soups (most have hydrolyzed vegetable protein or food starch which is wheat or gluten), many dressings and cereals and chips use wheat to “bulk up” their content since it’s cheap. You have to carefully read every box to make sure there is no gluten. I mean, living gluten free means a lot of time in the kitchen. Not sure if she knows that, but if she does thats a lot of work for attention. Maybe for her it’s worth it though.
You could encourage her to get tested, otherwise there is no way to take merit in what she says.
If her dad has a gluten intolerance or Celiac’s Disease there can be a genetic link.
And before I got diagnosed with a gluten intolerance I suffered with a lot of symptoms that wouldn’t necessarily be thought as related. For example as well as stomach aches, gastritis, and heartburn I had a lot of depression, headaches, joint pain, and eczema so I mean, who knows? Its tough to say.
I would hope that as a college student she could at least cut the umbilical cord lol…it’s got to happen sometime.
