Amylase is an enzyme that breaks starches into sugar. You have it in your saliva, and the pancreatic juices used in digestion also have amylase in them.
Most of the amylase used in processing of human food is made by culturing bacteria that make amylase, and then purifying and filtering the amylase. Some amylase also comes from yeast cultures or animal origin.
There is no gluten in amylase.

Amylase is the enzyme in your saliva that helps to break down starch. It’s also found in ginger root and many other places. I guess it’s possible that a particular batch of amylase may contain gluten. It would depend on the source, and whether it got contaminated intentionally or accidentally during processing. It’s not one of the things I look out for, malt, maltase, monosodium glutamate (msg) are more likely to cause problems in snacks.
The good news for your cousin is there is alot of helpful information avialable online. I have cooked for a person with a gluten allergy for over 20 years. Please be informed that gluten is found in many other digestible items such as:
medication, envelope paste (where you lick it), flavorings & any foods that were processed in a plant where foods containing gluten are ground or processed, just to name a few. Online help can be found when searching for celiac disease.
