Gluten And Dairy Free Cookie Recipes?

by Maya

I know someone who has a gluten allergy and dairy allergy and I’d like to make him some cookies for christmas. I’ve looked online, however a lot of these recipes end up not tasting good. Just wanted to know if you have any yummy recipes to share.

One of my favorite recipes is Raw Goo Balls. They’re easy. Throw a few almonds into a food processor and grind them up. Then add some pitted dates, some peanut butter, and some shredded coconut and grind it all up. You can play with this a little to get a certain taste. Try different nuts or nut butters. I don’t have a specific recipe, but don’t worry, it’s hard to go wrong. The quantity of what you put in will pretty much be the same as what you get out, minus the date pits. The last thing you do is make small balls out of the thick goo and I like to roll it in more coconut to give it some a white coating.
They’ve always turned out delicious for me. Good luck.

Truthfully, these cookies usually don’t taste good. I have a gluten allergy and I usually by a pre-made mix at the health food store. However, I’m not sure if they are dairy free though. Good luck.
Tip: If you do decide to make them home-made, add a little xantham gum to the dough.
