Sorry to hear about your son’s malabsorption – celiac disease and gluten intolerance are becoming more and more popular. I have had celiac disease, lactose (dairy) intolerance, and diabetes for the better part of my life. Being a chef and nutritionist by hobby, I decided to put up a website with recipes and information for a gluten and dairy free lifestyle at the following website:http://cindalouskitchenblues.blogspot.co...
Hope you find it useful!

I’m gluten intolerant myself, so I collected a lot of recipes. I have set up a small database of them here:http://www.the-health-site.com/articles/...
Many of them are really quick and easy, and most are great for kids.
I also have a fun quiz “Are You Gluten Intolerant” – just 5 multiple choice questions, which you can find here:http://www.glutenfreedietbook.com/factsh...
It includes the option to sign up for a weekly factsheet which contains gluten free recipes in every issue.
Does he have Celiac Disease? Anyway you will find lots of recipes and support at these sites:

My personal faves (not sure if all are dairy free, but many GF mixes can be made dairy free)
Pamela’s Mixes
Bobs Red Mill for flours
Glutino products
Kinninnick products
and these cookbooks:
Gluten Free Gourmet by Bette Hagman
and
Wheat Free and Gluten Free Cooking for Kids and bUsy Adults by COnnie Sarros
Both cookbooks (as wella so thers) offer non dairy alternatives to each recipe.
Good luck!
